8 Ingredient Vegan Chocolate Chip Cookies

Switching to a Plant Based, Dairy Free diet does not mean that we can't enjoy delicious chocolate chip cookies. This egg free, dairy free, low sugar chocolate chip cookie is the perfect treat raw or baked!

We eat a lot of cookie dough around here {it is my weakness}. I have had to adapt my recipe over the years to be egg free. I've even tried avocado and applesauce instead of butter, honey and agave instead of sugar...all have been great.
But sometimes we are craving traditional chocolate chip cookies....and this recipe is the closest I've gotten {trust me I've tried a lot!}. These cookies are not too sweet, a little crunchy (but still soft enough) and 100% PBDF, GF, V & NON GMO!

Plant Based, Dairy Free Traditional Chocolate Chip Cookies
Dry ingredients:
1 1/4 cups organic gluten free all purpose flour
1 1/2 teaspoon organic cinnamon
1/4 teaspoon Pink Himalayan salt
Wet ingredients:
3/4 cup Earth Balance (vegan butter)
1/2 cup organic brown sugar
3 teaspoons organic vanilla extract
1/2 cup vegan chocolate chips
Instructions
Preheat your oven to 350 degrees F and lightly grease a baking pan.
In a medium bowl, whisk together all the dry ingredients.
In a medium bowl or mixing stand, add all the wet ingredients, and use a beater to cream the butter and sugar together. Pour the dry ingredients into the wet ingredients and mix. Once mixed together stir in the chocolate chips. {Don't be afraid to eat the cookie dough raw, it's egg free!}
Scoop a generous tablespoon of cookie dough and place on the prepared baking sheet. Repeat until you have filled you coolie sheet (be sure to leave about an inch between each cookie).
Bake 15 minutes until the cookies look golden on the on underside. Let the cookies set for a couple of minutes.
Then transfer to a cooling rack to cool completely. We never really do this..we just inhale them :)
